The harvest is strictly done by hand. The soft pressing of whole bunches is done following traditional processes of the Classic Method. The must ferments in stainless steel tanks and in French oak barriques and tonneaux where it remains in refinement until the following spring. The cuvée and refermentation in the bottle preparation phases follow. Maturation on the lees lasts for more than 60 months. The final stages include disgorgement and the addition of liqueur d’expedition.
Intense, highly concentrated golden notes stand out and a noble perlage.
In the glass intense, highly concentrated golden notes stand out. On the nose the range of aromas is immediately very complex and stratified, with hints of honey, mango and a mix of oriental spices among which curcuma and curry stand out. Notes of a delicate fumèe slowly emerge in the glass. In the mouth it shows a rich, harmonious and enveloping structure which ends in a long and satisfying finish.
