Its notes of tropical fruit intertwined with delicate hints of white flowers and slightly spicy notes
enhance seafood and lake dishes. The combination with Artic Char is particularly good. Its full, aromatic
taste, good structure and persistence on the palate also make it good with cream-free desserts like
40% Pinot Bianco, 40% Chardonnay, 20% Pinot Nero.
Vineyards on alluvial fans in Roveré della Luna, high up in Val di Cembra and in the hills east of Trento.

The harvest is strictly done by hand. The soft pressing of whole bunches is done following traditional processes of the Classic Method. The must ferments at low temperature in stainless steel tanks where it remains in refinement until the following spring. The cuvée preparation and refermentation in the bottle phases follow. The subsequent maturation on the lees continues for more than 30 months. The final stages include disgorgement and the addition of liqueur d’expedition.

In the glass it appears with an inviting and bright straw yellow hue. Its bouquet is reminiscent of white flowers, almonds and pleasant notes of citrus freshness. The mouthfeel is initially enveloping that progressively leaves room for an inviting crispiness and a smooth and satisfying finish.
